Toffee Mocha Cupcakes

Chocolate mocha cupcakes topped with butter cream and toffee pieces

Prep Time: 15 minutes

Cook Time: 18 minutes

Yield: 24 cupcakes

Ingredients:

1 chocolate cake mix
1 cup cooled brewed coffee
1 cup toffee bits
1 cup butter, softened
1 cup shortening
1 teaspoon vanilla extract
1/8 teaspoon salt
2 Tablespoons liquid vanilla coffee creamer
8 cups powdered sugar
1/3 cup chocolate chips
1/2 teaspoon shortening
1/2 cup toffee bits

Instructions:

1. Mix up batter according to directions on the box. Substitute cooled brewed coffee for the water in
the directions. Stir in toffee bits after mixing.
2. Fill cupcake liners 3/4 full. Bake at 350* for 18-20 minutes or until the top springs back. Cool on
wire rack.
3. Beat butter, shortening, vanilla, salt, and creamer until creamy. Slowly add sugar. Add 1 more Tbsp.
creamer to thin it out if needed.
4. Place chocolate chips and shortening in a microwave safe bowl. Heat for 30 seconds. Stir until
creamy. Place in a plastic baggie with one tip cut off. Drizzle the tops of the cupcakes with
chocolate. Sprinkle with toffee bits. Makes 24 cupcakes.
